Hi, I am currently studying highschool biochemisty and recently did an experiment on factors affecting enzyme function. I wanted to measure the rate at which pepsin could disolve a protien in a solution.
I know that pepsin is present in stomach acid and is used to break down protiens into amino acids, so in my experiment i exposed pepsin in a solution of pH 2 to various sized cubes of agar.
I'm not sure how widely agar is used, but it is a firm geletin like substance made of seaweed protien. I selected it for its rigidity and convenience, and that it is mostly protien.
I realized that the agar would not be exposed to exactly the same conditions as it would be inside a human stomach, it would not be chewed etc. I was hoping to measure any change in mass as a result of chemical breakdown.
